Wine Maker’s Notes
Koutsoygiannopoulos is the name of the family that produces the wine. The winery was founded in 1870 by the brothers Grigoris and Dimitris Koutsoyannopoulos and is located in Vothonas. The vineyards are located in the Exo Gialos area of Fira (Aspra Homata).
Vinsanto is produced only from white grapes of the Assyrtiko and Aidani varieties. We harvest these grapes last of all. We want them to be at their most mature and sweet. They are sun-dried on nets for 14 days. The sun dehydrates them, caramelizing their sugars, which is why they provide intense aromas and flavors of t caramel, honeycomb, raisin butter, and dried fig. As they are sun-dried, the grapes shrink. Some of the juice evaporates. The remainder is rich in dextrose. The sun-dried grapes are pressed. Their juice goes into barrels for fermentation. After the drying, the grape juice is syrupy, due to its high sugar content. The yeast that converts the dextrose into alcohol reaches saturation point and becomes inactive.
We need 5 kg of sun-dried grapes for each bottle. A 100% natural wine with absolutely no additives (sweetener, aroma, alcohol). It is aged in oak barrels for at least 2 years and it becomes the color of caramel with brown highlights.
Vinsanto is served, before or after food, with fruit, cheese, nuts, chocolate cake, and is perfect on ice-cream. Best served at 7-9oC.
