Wine Maker’s Notes
Koutsoygiannopoulos is the name of the family that produces the wine. The winery was founded in 1870 by the brothers Grigoris and Dimitris Koutsoyannopoulos and is located in Vothonas. The vineyards are located in the Exo Gialos area of Fira (Aspra Homata).
The name Nykteri, comes from the word nykta, which means ‘night’. In the past, the grapes were trodden at night so that the temperature would be better. A very well-known Santorinian wine, the way it was produced was a matter of practicality. The wine was high in alcohol content to preserve it better. It was stored in oak barrels, which was the only way to keep it.
With its moderately bright yellow-gold and crystal clear skin, the grape expresses a rich varietal aromatic character. Ripe apple, fresh wood, low intensity spice. Initially salty, the acidity begins to increase in intensity as long as it stays in the mouth. Lively, well-structured with a characteristically intense finish.
Perfectly matches with seafood, fish, white sauces and smoky flavours. Best served at 10-11oC.
