Wine Maker’s Notes
Koutsoygiannopoulos is the name of the family that produces the wine. The winery was founded in 1870 by the brothers Grigoris and Dimitris Koutsoyannopoulos and is located in Vothonas. The vineyards are located in the Exo Gialos area of Fira (Aspra Homata).
The name comes from the bubbles (fysalides) which form in the wine when it is very fresh, and it keeps the crispness and freshness of new wine.
The skins and juice are macerated for 2 days. Once it has achieved the desired colour, the skins and juice will be separated. It is fermented in a stainless steel tank at a controlled temperature of 16°C. We get the impressive rose-red colour, and the wonderfully crisp taste that results from the mixing of white and red varieties.
Fysalis is a fresh and fruity high-quality wine. that perfectly matches with seafood, fish, white meat and salads. Best served at 11oC.
