Winemaking
Well-ripened grapes from the family-owned vineyards located in Pyrgos Kallistis and in Megalochori, spread out under the sun after careful collection. After a drying period of 7-12 days, they are collected and driven to the press. Alcoholic fermentation is followed at temperatures of 18-20, 5°C. After the fermentation period of 2 months, the process stops naturally. This is followed by the transfusion of the Naturally Sweet Wine that has resulted in 225lt oak barrels where it has matured for at least 12 years.
Organoleptic characteristics
Deep brown-purple color, a result of its long stay in oak barrels. The extremely rich and sophisticated aromatic character is dominated by dried apricot and fig jam. Unique aromas of vanilla, caramel and sweet spices such as cloves, etc. Its long ripening period offers a multi-dimensional sense of richness in the mouth. Balanced sweetness and freshness of acidity, unique, intense, and long-lasting aftertaste. Best served at 10-12oC as a dessert wine.

About Venetsanos Winery
Venetsanos winery is located right above the port of Athinios, overlooking the magnificent caldera of Santorini. The Venetsanos family has a very long tradition in producing wine. Originally was produced for the island and subsequently, it was exported extensively, and particularly to countries such as Russia. It was built in 1947 by Venetsanos family and became the first industrial winery on the island. Its most distinguishing feature is the structural design, which essentially used gravity, facilitating energy efficiency, at a time when access to electricity and other energy sources was very limited. The winery was built in an unconventional manner constructed from above and moving downwards.
The Venetsanos winery, that can now be visited, is the culmination of this rich family tradition with the recently revamped buildings. The exceptional architectural structure is combined with the history of one of the most important wine producers in the Aegean. The winery is located in the most breathtaking location offering incredible vistas over the caldera and volcanic islands.
