Wine making
Grapes from selected vineyards by the family vineyards were harvested at appropriate maturity and after blasting were led to a pre-fermentative extraction process for about 6 hours at 6-10oC. Static de-scaling followed and the wort was then driven to a vertical oak fermentation tank (Foudre) where the alcoholic fermentation took place at controlled temperatures of ~16oC. Remained with fine wine lees after fermentation for 12 months. Then followed the removal of the lees and maturation for another 8 months. Bottled in April 2022.
Characteristics
Bright lemon color with golden highlights. On the nose, it appears complex with the delicate aromas of yellow fruits, and citrus fruits are surrounded by a distinctive oak character and hints of flint. In the mouth, the typical minerality of Santorini is evident while the relatively high acidity gives a pleasant coolness that balances the sweetness of the alcohol. The
properly structured and fatty body incorporates fruits (peach, citrus, etc.) and saltiness along with soft vanilla and hints of toast. Intense and long aftertaste A wine with prospects of further development over time.

About Venetsanos Winery
Venetsanos winery is located right above the port of Athinios, overlooking the magnificent caldera of Santorini. The Venetsanos family has a very long tradition in producing wine. Originally was produced for the island and subsequently, it was exported extensively, and particularly to countries such as Russia. It was built in 1947 by Venetsanos family and became the first industrial winery on the island. Its most distinguishing feature is the structural design, which essentially used gravity, facilitating energy efficiency, at a time when access to electricity and other energy sources was very limited. The winery was built in an unconventional manner constructed from above and moving downwards.
The Venetsanos winery, which can now be visited, is the culmination of this rich family tradition with the recently revamped buildings. The exceptional architectural structure is combined with the history of one of the most important wine producers in the Aegean. The winery is located in the most breathtaking location offering incredible vistas over the caldera and volcanic islands.
