Notes
Produced by the Vassaltis Vineyards, the newest winery in Santorini located in Vourvoulos area, on the road to Oia. Its name was inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini.
Vassanos, in antiquity, was a stone used to test the purity of precious metals, eventually becoming a byword for thorough and exacting examination. Over the years it came to mean hardship and adversity, just like the harsh conditions faced by the indigenous Mandilaria grape that gives the wine in this bottle.
Ruby red colour. Interesting aromas of ash, pepper, salt, olives, and dark fruits. Strong tannins, medium acidity, and a medium body.
Ideally paired with smoked or salted fish. It is best served at 14-16oC.
