Notes
Produced by the Vassaltis Vineyards, the newest winery in Santorini located in the Vourvoulos area, on the road to Oia. Its name was inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini.
The fermentation of this Barrel-Aged Santorini began in stainless steel tanks and then transferred to oak barrels. After the end of fermentation, the sludges remained for 3 months in the barrels and 7 months even in a stainless steel tank.
The acidity, the mineral, and full of citrus aromas remain and also get enriched by a smoky character, which goes along perfectly with its long aftertaste.
Ideally paired with pies, grilled fish, white meat cooked with white sauce, and hard cheeses. It is best served at 8-10°C.
