Notes
Produced by the Vassaltis Vineyards, the newest winery in Santorini is located in the Vourvoulos area, on the road to Oia. Its name was inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini.
Plethora is a unicorn wine. Inspired by the winemaking techniques of our ancestors we harvest overripe bunches of Assyrtiko and ferment them in stainless steel tanks. The overripe character gives a high alcohol lev- el while allowing for some residual sugar. We then allow the wine to mature in barrels that are not topped up allowing thus for gentle oxidization to take place. After twelve months in the barrels, the wine is bottled and cellared for two years before its release. A limited number of bottles were produced.
Golden color, toast, vanilla, mandarin, blood orange, wet stone, nuts, white pepper, very complex nose. Salt taste, ripe citrus fruits, toast, structured and concentrated, full-bodied, very long after-taste.
Best paired with white meat, hams, and aged cheeses. Enjoy it at 12°C.
