Wine Maker’s Notes
A fine dessert wine from the sun-dried grapes Assyrtiko and Aidani of Santorini. The grapes are spread on terraces under the sun for 6 – 8 days before pressing, fermentation in stainless steel tanks.
The 8-year maturation in oak barrels and the aging in bottles offer seductive aromas of honey, spices and caramelized fruits. Velvety palate with remarkable structure and exquisite long after taste. It was bottled unfiltered.
Round, velvet, and rich texture in taste with a remarkable balance between honey and lemon notes. Best served at 12 oC. Alone as an aperitif or enjoy with light desserts made of cream with dried nuts or sweet spices.
