Since 2011, “Assyrtiko De Louros” has been the most exclusive wine of Hatzidakis Winery. Haridimos Hatzidakis, always a pioneer, paid careful attention to the variety and the vineyard, making a wine that held all the knowledge and expression of the terroir in a bottle of wine sourced exclusively from one specific vineyard.
Having a long tradition in cultivation and always with respect to the environment, the Hatzidakis Family and the new team of the Winery aim to produce as many wines as possible exclusively sourced from organic vineyards.
Therefore, after a shocking loss for the wine community and a two-year pause we are once again producing “Assyrtiko de Louros”, this time from organically grown grapes. For one more year, the Assyrtiko variety surprised and impressed with its potential. Grapes were sourced from a separate vineyard in the area of Pyrgos from centuries-old vines. “Assyrtiko De Louros” vintage 2019 is bottled in 2,500 numbered bottles, certified by DIO.
Grapes: From selected vineyards, at the wider area of Louros of the village of Pyrgos Kallistis and at an altitude from 180 up to 220 meters.
Vinification: Skin contact for 12 hours, separation of must from grapes, clarification, and fermentation with selected yeasts at 18˚C.
Final fermentation and maturation on the Lees for 24 months in old barrels. Limited production.
Characteristics: Yellow color with intense golden hues, aromas of ripe stone fruits, and oriental spices. Dense and mineral on the palate with typical acidity and a tannic long aftertaste.
Serving Suggestions: Served at 12-14 ˚C, with shellfish dishes, white and red meats, game, as well as mature full-fat cheese.

About Hatzidakis Winery
Hatzidakis winery was founded in 1997 by Haridimos Hatzidakis and Constantina Chryssou.
In 1996, Constantina showed to Haridimos the vineyard of her family. This vineyard is located in the village of Pyrgos Kallistis, on the way to the monastery of “Profiti Ilias-Santorini”. It is situated 330 meters above sea level. The vineyard was abandoned for many years, as Constantina’s parents, George&Aikaterini Chrisou had left the island because of the earthquake in 1956 and had moved to Athens as many locals did at that time. Until 1996, the vineyard remained uncultivated. Haridimos was the first who took the decision to re-cultivate the vineyard and the rest is history. The vineyard was cultivated with Aidani which is an organic grape variety.
When Constantina and Haridimos visited the vineyard, Haridimos spotted a cave at the end of it. “Over here, we can create a “Kanavaki”, he said. “Kanaves” is the local name for wineries. Thus, a small underground Winery started to shape which was built with patience, persistence, enthusiasm, passion, with “meraki” as we say in Greek, and hard work. And the dream came true!
In 1998, the first bottles of wine, vintage of 1997, were released from that new Winery. “Santorini” wine, vintage 1997, from the white grape variety Assyrtiko and “Mavrotragano” wine, vintage 1997, from the Mavrotragano grape variety of Santorini were the first two wines to be produced.
Today, Hatzidakis Winery cultivates 100 acres of vineyards and most of them are organic.
