Winemaking techniques
Vineyard age: Extremely old & non-grafted vines with roots of an average age that goes over 3 centuries.
Elevation: 100m
Vinification/Maceration: Assyrtiko Clay Assyrtiko grape skins macerated into the fermenting must for 7 days. Fermentation, maceration as well as aging took place in modern clay spheres in the place of ancient amphoras. Fermentation: The must fermented spontaneously with indigenous yeast strains. No inoculation or temperature control was applied.
Malolactic Fermentation: No
Fining: No fining of any sort
Aging/Maturation: The wine aged for 4 years on its yeast lies, in the same clay spheres that it fermented. No “battonage”. Small quantities of sulphites were applied.
Filtration: No
Vegan/Vegetarian: Yes
Tasting Notes
Dark of color, the shade of deep amber – as in accounts of old. The most intense of noses, dried fruits, vanilla, honeycomb, something between wine and bourbon. The most impertinent mouth, with its voluminous body, flavors to match the aromas, ever-young acidity, and ever-present tannins.
