Wine maker’s notes
Vinification Techniques: The wine, which is fermented by 50% in oak barrels, intensive, perfect structure, nice acidity, and great length. After undergoing the 12-hour skin contact process at around 10οC, the grape must is placed in small 1.000 litre INOX tanks and in new 225lt French oak barrels. Fermentation develops on its own at a gradual pace.
Organoleptic Characteristics: The citrus aromas of the Assyrtiko grapes combined with the floral aromas of the acacia wood and the vanilla of the oak result to a wine with a highly complex aromatic profile. Minerality and well-balanced acidity give depth and longevity.
Serving Suggestions: grilled fish, white meats, lamb with lemon sauce, assortment of yellow cheeses. Best served at 12oC.
