Wine maker’s notes
Nychteri is one of the most traditional but also famous Santorinian wines. The definition of the word ”nychteri” is the work during the night. This new label by Tselepos and Canava Chryssos is a very interesting expression of the Santorinian vineyard, rich in aromas and intense aftertaste. It matures in oak barrels for 6 months and its’ characteristic high acidity and minerality of the variety balances a high fruit ripeness.
The grapes come from very old Assyrtiko vines in the area of Pyrgos, planted in terraces, called pezoules. Harvesting is manual and is done only when the grapes have over-ripened.
Ideally paired with fish and seafood, white meats, goat cheese, cheese, and vegetable pies. It is best served at 10-12oC
