Wine maker’s notes
Laoudia, for the Santorinians, are the holes where hares nest. Laoudia also is the new wine by Yiannis Tselepos and Canava Chrissou, from Santorini. A new but completely different Assyrtiko, a collectible wine in a very limited quantity.
The grapes come from very old Assyrtiko vines at the area of Pyrgos, planted in terraces, called pezoules. Harvesting is manual and is done only when the grapes have over-ripened. The fermentation and maturing are also done in amphoras, and the wine remains there for 8 months. It then rests in the bottle for 10 more months before reaching you.
Gentle lemon color in the glass. Pure aromas of citron, lemon, bitter orange, grapefruit, honey, butter, vanilla, saffron, ginger, gunpowder, flinstone.
Ideally paired with fish and seafood, white meats, goat cheese, cheese, and vegetable pies. It is best served at 10-12oC
