Wine Maker’s Notes
Grapes are harvested in August from our vineyard “Stassi” in Akrotiri. The soil is of volcanic origin, sandy and calcareous.
Vinification and aging: picking of over matured grapes, then sun-dried for 10-12 days.Common alcoholic fermentation of all three grape varieties. Aging lasts two years and it is undergone in 220 litres barriques of French oak
Tasting: black, almost opaque in color. It delivers aromas of sour cherries, currants, blueberries,
Pair it with: dried nuts, duck foie-gras, aged hard cheeses, cherry fruit cakes, fruit tarts, black chocolate, Black Forest. Best served at 8-10 °C.
