Wine maker’s notes
Santorini is the first wine created by the winemaker Apostolos Mountrichas under the name Delfinia. Now, bearing the name Santorini, it is the main label of Anhydrous, which comes from selected vineyards. Santorini Anhydrous expresses what volcanic terroir stands for. Crisp acidity, intense minerality, distinctive salinity, and graceful ageing. All volcanic origin characteristics.
Spontaneous fermentation with indigenous yeasts, remaining on the fine wine lees.
Aromas of lemon & lime in a mineral character. On the palate the wine is dry, with refreshing acidity and a salty aftertaste.
Best served at 12°C. It accompanies ideally seafood, shells, fried or grilled fish, and all Aegean Archipelago delicacies.
About Anhydrous
It all began in early 2000 when the winemaker Apostolos Mountrichas of Avantis Estate Winery in Evia, fell in love with Santorini and the strong personality of Assyrtiko.
In 2012 he returned back for the winemaking of the top indigenous variety in the incomparable volcanic terroir of Santorini.
His philosophy relies on wines with purity, primary varietal characteristics, and balance. Wines that reflect the connection to the Santorinian anhydrous land, the majesty of earth, the volcano, the sun, the sea breeze, the Cycladic air – the intense personality of this unique PDO land. High-quality wines sealed with the raw beauty of Santorini.
From April 2021, in the ninth year of its presence on the island, the Avantis Santorini Winery changes its name and appearance and evolves into Anhydrous.
The design of the new logo is a symbolic depiction of the vineyard and the unpredictable changing weather conditions that prevail on the island. The elements of nature alternate, contributing to the quality and complexity of the wines. Light – Water – Earth – Sun – Air – Fire – Sea, are presented in an image as a whole, with a design that refers to an old engraving, thus bridging the past with the future.
