Wine maker’s notes

Origin of grapes: a single vineyard of very old rootstocks (over 150 years old) located in the lower part of Pyrgos village producing a rare and special fruit.

Vinification: Classic white vinification under controlled temperature is followed after a short pre-fermentation cold soak. The terroir-driven approach in order to express its unique character. Maturation with the gross lees for 11 months in stainless steel tank under frequent lees stirring. A year of cellaring adds more complexity and layers to this classy wine.

Description: White blossom springtime aromas, and ripe exotic fruits followed by sweet herb aromatics and peppery background. Lovely weight with grip and extract. The palate shows candied quince with zingy acidity and a vibrant finish. Long, sweet, and mineral aftertaste.

Serving and food pairing: Served at 11-13°C, decanted for correct “breathing” to highlight its complex character. Due to its exotic and spicy character combines nicely with sushi, tuna mango carpaccio with capers, and sweet-and-sour pork with quince.
