Source of grapes: a single vineyard of very old rootstocks (over 150 years old) located on the district of Fira facing the caldera ring and producing a rare and special fruit.
Winemaking: Classic white vinification under controlled temperature is followed after a short pre-fermentation cold soak. Terroir driven approach in order to express its unique character. Maturation with the gross lees for 2 years in a stainless steel tank. A period of cellaring adds more complexity and layers to this textbook Santorini.
Description: Bright apricot nose on wet gravel and flinty minerality. Seaweed, pink grapefruit on a juicy background. Impressively elegant mouthfeel with a briny tang flow and complex sea breeze flavors. Lemon merangue pie, roasted cashew, and a touch of tannic grip. Gorgeous sunny, salty, and a crystalline endless finish.
Serving and food pairing: at 11-13°C, decanted for correct “breathing” to point out its complex character. Due to its fine character combines nicely with oysters, saffron stemmed mussels dolmades filled with sardines, and pistachio-crusted salmon.
