Wine maker’s notes
VINEYARDS
Single parcel above the village of Fytia, planted 25 years ago on a northeast slope.
VINIFICATION
Grapes are destemmed, fermented with indigenous yeasts, and macerated for 8-10 hours.
MATURATION
4 years in second-use, 500-litre French oak barrels
CHARACTERISTICS
Bright medium orange color. Intense aromas of dried strawberry, cherry, cranberry, cinnamon, orange, quince, lotus, sun-dried tomato, nutmeg, dried herbs, caramel, and candied rose petals. An impressive structure, medium body, refreshing acidity, and silky tannins.
Best served at 8°C. Pairs ideally with pasta, eggplant and pork dishes.
