The F Santorini 2020 One OFF is a new project by Foivos Papastratis, one of the youngest winemakers in Greece who is a student of the Department of Oenology and Beverage Technology of the Athens University of Technology.
As its name suggests, each harvest of “One OFF” will be unique! Every year Fivos Papastratis will make an one-off winemaking from a different wine production area, with different varieties and different techniques!
Starting with the 2020 harvest, he chose to work with Anhydrous Winery and Apostolos Mountrichas, in Santorini and make the first “One OFF” winemaking Santorini PDO 2020.
Winemaking in stainless steel tanks, indigenous yeasts and matured on the wine lees for 6 months.
Very limited production.
