Wine maker’s notes
We are proud to make such a classy wine. The Collection comes from a single vineyard that has been giving us the best quality grapes for the last many years. We decided to keep it separate and give it a special treatment. Restrictive pruning, low yields (4000 kg per hectare), strict selection of oak barrels.
The limited number of bottles that are produced (500 – 1500) bottles a year, depending on vintage diversity. It is sold ‘en primeur’.
It is our Grand Cru.
Vinification Cold maceration before vinification. Maceration takes place approximately 45 days. Maturation in new French oak barrels 225 lt. (Ermitage and Seguin Moreau) for 18 months.
Tasting notes: Opaque garnet color with ruby tints and complex bouquet of black and dried fruits (prunes, figs, blackberries), spices, and vanilla, constantly developing. Very full palate with the aroma of ripe black fruit, jam, pepper, sweet spices, pepper ink, coffee, chocolate, and tobacco. Ripe, fine-grained tannins, powerful structure, and long length.
The suitable word for it is ‘Concentration’.
Unfiltered wine. Any amount of sediment in the bottle is quite normal. It is recommended to be decanted 1 hour before consumed.
