Wine maker’s notes
Aspros Lagos means “White Hare”. It is the placename of the vineyard. It is a unique white wine 100% made from the excellent Cretan Vidiano variety, planted at the outstanding vineyard “Aspros Lagos”. The configuration of its rich personality is also due to barrel usage. In the area of Dafnes, near Heraklion (Crete), at 350 meters above sea level.
Classic white vinification at 20°C, with fermentation in barrels.
The wine matures in new and second use barrels, made of 40% acacia and 60% French oak, for five months.
Very nice golden color, with hues of green and yellow. Its aroma is rich in white flowers and citrus fruits, with a delicate buttery bouquet of a slight beeswax scent, apricot, linden, and melon. Rich flavor that, with some more ageing in the bottle, gets oily characteristics and develops a dense apricot character. You can distinguish a seductive mineral background in the flavor of this wine. Superior, long-lasting aftertaste second to none, in apricot tones.
Ideally paired with fish, such as grouper, fred porgy, common dentex, lobster, grilled scorpaena, turbot, and all shellfish, as well as pork with dried fruit and pullet with white sauce and mushrooms. Brilliant is the combination of this wine with some Cretan traditional dishes, like boiled young goat and pilaf or “lamb with askolibroi” (lamb with golden thistle). It is best served at 10oC

About Douloufakis Winery
Douloufakis wines are produced in Dafnes, a village very near Heraklion, Crete, Greece. At this place, in 1930, grandfather Dimitris Douloufakis started producing wines professionally, in a traditional way. Nowadays, vineyard cultivation and wine production – the tradition of the Family – is continued by Dimitris’ grandson, Nikolas Douloufakis (pronounced: /ðʊlʊfʌkɪs/). Nikos, having studied Oenology in Italy, is effectively striving to highlight the quality of Cretan – Greek wines all over the world. The family tradition of the winery tends to be continued, as Nikos’ two sons are studying Oenology.
Most Cretan grape varieties are white. Vidiano is a full-body variety that gives very nice fresh wines. White varieties include Vilana, Malvasia, and Muscat. There are only three indigenous red grape varieties: Liatiko, Kotsifali, and Mantilari. Liatiko is mainly grown in our region and is characterized as “Protected Designation of Origin – Dafnes”. It is an interesting and stylish red variety that surprises with its diversity. Kotsifali is usually vinified in blends with Syrah. We have also chosen to grow some international varieties such as Syrah and Cabernet Sauvignon, varieties that have been fully acclimated to our region and give us very good wines.
The Douloufaki privately owned vineyards are situated on hill slopes at an altitude of 350 meters and the cultivation is done both by hand and mechanical means. They cover 20 hectares and are located within the vine region of Dafnes, on the island of Crete in Greece.
