Wine Maker’s Notes
The Ovilos Red is derived from the Cabernet Sauvignon varietal, specifically from the estate’s first vineyard planted in the foothills of Mt Pangeon. It is a wine with a long aging process, produced from extended maceration of grapes and aging in new French oak barrels for 16 months. It is then allowed to mature in bottles for 24 months.
It has a deep ruby red color with exquisite aromas of raspberry marmalade, red fruit, and violet in harmony with cedar, smoke and milk chocolate for a skillful blend. It has a full-bodied, rich flavor with impressive structure and an artful balance between its acidity and generous tannins. With a long finish, it reaches its peak elegance after a few years. It can be cellared for at least 15 years and is served at 16-18°C.
Food pairing rare rib-eye steak on the grill, select meats grilled rare or medium, lamb or goat on the spit, truffle dishes, dry-aged game, porcini, and chestnut paté.

About Biblia Chora Winery
Ktima Biblia Chora is located in the village of Kokkinochori, Kavala, in Northern Greece. It was established by the oenologists Vassilis Tsaktsarlis and Vangelis Gerovassiliou who planted the first organic vineyard of the estate in the foothills of the Mt Pangeon, in 1998. Today, the 57-hectare privately owned vineyard surrounds the modern winery, where all the wines of the estate produced.
Their goal is to craft wines of exceptional varietal expression and quality that showcase the best that the Pangeon ecosystem has to offer. Thus, the vineyard is cultivated with great care, and state-of-the-art technology blends with the winemaking tradition of the region and the producers’ know-how and experience.
