If you’ve ever visited Santorini, most probably you have tasted these famous tomato fritters or tomato balls or ntomatokeftedes for the locals, once or more times and you can still remember this marvelous taste! Along with fava dish, and Santorini salad, they are the most representative recipes of the typical, Santorinian cuisine!
Did you know though how easy it is to cook them back home? We are happy to share the recipe here with you! What you will need: 3-4 tomatoes, finely chopped, without the seeds, 1 large dry onion grated, 1tbsp fresh spearmint, finely chopped, 1 tbsp dried oregano, ½ cup cornflour, 1 tsp baking powder, salt and pepper and of course, olive oil for frying.
Mix all the ingredients in a bowl, the chopped tomatoes, the onion, the spearmint, the oregano, the cornflour, the baking powder, add salt and pepper whilst stirring with a spoon, until the ingredients are combined and the mixture is firm. Optionally, you can also add egg, cheese or more herbs of your preference. Put the mixture in the fridge for 30-45’. In a saucepan add 4-5 cm of olive oil and heat into high heat. Dip a tablespoon in some water and spoon out some of the mixtures into the hot oil. Repeat until the surface of the pan is filled, 4-5 per time. Dip the spoon in the water every time, so that the mixture doesn’t stick on it. Fry the fritters for 2-3 minutes on each side, until they become gold to reddish and crispy. After removing from the pan, drain on paper towel. Serve with greek yogurt of other dips and enjoy with a glass of Santorini Wine!
