Liassimo – The New Sweet Wine Label Released by Hatzidakis Winery

“Liassimo” is the new sweet wine made from sun-dried Mandilaria grapes, recently released by Hatzidakis Winery.

As the winery’s team states: “We felt it was the right moment to focus on the sweet wine made from sun-dried Mandilaria grapes that had been patiently aging for many years in oak barrels in the winery’s cellars. Our enology team, led by Spyros Papandreou, sampled the best barrels from vintages spanning 2002 to 2021 and created fractional blends. After tasting them together, they decided on a specific blend. We are proud to present our new sweet wine made from sun-dried Mandilaria grapes!

Liassimo was bottled unfiltered, with only 4,000 bottles of 500ml produced. The label was designed by Ariadne Hatzidakis.

The grapes come from vineyards in Pyrgos, Megalochori, Akrotiri, and Emporio, from vines aged between 50 and 100 years. To create this wine, overripe grapes are sun-dried for 12-15 days. After pressing, the must ferments with indigenous yeasts for 2-3 months in stainless steel tanks at a controlled temperature of 20-22°C. It matures in French oak barrels. The final product is the result of selecting the best barrels from vintages 2002 to 2021, using the fractional blending method (similar to the solera system).

The wine has a deep red color with intense brown highlights. It showcases aromas of red forest fruits, jam, and fig. On the palate, it is pleasant with a rich texture, high acidity, and a long aftertaste. It is best served at 12-14°C as a dessert wine or paired with dark chocolate, dried fruits, fruit tarts, and aged intense cheeses.
