“Akulumbo” is a white wine from 100% Assyrtiko grapes from an overripe harvest (mid-September), a month after the regular harvest, that has been fermented and matured with its lees in a 1600-liter amphora for 24 months. As a result, we get this unique expression of Assyrtiko, characterized by an exceptionally rich body, long aftertaste, and high alcohol content. This Assyrtiko, in its most extreme form, expresses perfectly the uniqueness of Santorini’s terroir. Inspired by the underwater volcano known as Kolumbo, which the locals of Oia used to call “Akulumbo”.
Unfiltered, very limited production (1800 bottles).
