Wine Maker’s Notes
Plagios Red is a regional expression of carefully selected grapes of the French Merlot variety subjected to the microclimate of Pangeon. It is vinified in a conventional manner with an extended maceration period. It has undergone malolactic fermentation following which it matured for 16 months in new French oak barrels. This full-bodied, dry red wine has a dense mahogany red colour. Serve cellar cool at 16-18°C or age for up to 10 years easily.
Nose: Its nose entices with typical varietal aromas of red fruits, especially black cherry, pleasantly enveloped in scents of cedar wood, nutmeg and vanilla.
Palate: Expect a wonderful wine with a fruit-driven core of mellow plummy flavours and a hint of dark chocolate on a pleasantly long finish. The strong tannins are well integrated in its firm structure that gives it great ageing potential.
Pairings: Plagios Red teams up very well with a variety of stews and grilled meats with spicy sauces as well as fatty cheeses.

About Biblia Chora Winery
Ktima Biblia Chora is located in the village of Kokkinochori, Kavala, in Northern Greece. It was established by the oenologists Vassilis Tsaktsarlis and Vangelis Gerovassiliou who planted the first organic vineyard of the estate in the foothills of the Mt Pangeon, in 1998. Today, the 57-hectare privately owned vineyard surrounds the modern winery, where all the wines of the estate produced.
Their goal is to craft wines of exceptional varietal expression and quality that showcase the best that the Pangeon ecosystem has to offer. Thus, the vineyard is cultivated with great care, and state-of-the-art technology blends with the winemaking tradition of the region and the producers’ know-how and experience.
