Wine Maker’s Notes
Plagios White is made from the French Chardonnay variety grown in a very low crop yielding area at the foot of Mount Pangeon. After a brief period of skin contact, the extracted juice is fermented in new oak barrels where it remains for a few months on the lees. The result is a pale straw-yellow wine with green tinges. Plagios, also known as ‘Sideways’, has 8-10 years ageing potential and is best poured at 12°C.
Nose: It smells surprisingly floral and mineral followed by intense aromas of ripe yellow stone fruit, citrus zest and cedar.
Palate: Plagios White is a fuller-flavoured dry white wine with a broad and creamy palate with sappy acidity to balance. Its long yet bright, fruity taste gives way to a lengthy honeyed finish of vanilla and hazelnut praline.
Pairings: This rewarding Chardonnay is a great food companion to fatty fish, creamy pasta dishes and risottos, poultry and mature cheeses.

About Biblia Chora Winery
Ktima Biblia Chora is located in the village of Kokkinochori, Kavala, in Northern Greece. It was established by the oenologists Vassilis Tsaktsarlis and Vangelis Gerovassiliou who planted the first organic vineyard of the estate in the foothills of the Mt Pangeon, in 1998. Today, the 57-hectare privately owned vineyard surrounds the modern winery, where all the wines of the estate produced.
Their goal is to craft wines of exceptional varietal expression and quality that showcase the best that the Pangeon ecosystem has to offer. Thus, the vineyard is cultivated with great care, and state-of-the-art technology blends with the winemaking tradition of the region and the producers’ know-how and experience.
