Wine Maker’s Notes
Ovilos White is a most exciting blend of two grape varieties, Assyrtiko and Semillon, grown in the warmest but most barren spot in the Estate’s vineyard located on the slopes of Mount Pangeon. The Semillon’s fragrant expression and ageing ability are complemented by the strength, structure and exceptional freshness of the Assyrtiko. After a brief maceration period on the skins, the wine is fermented in French oak and left in contact with the lees in barrel for a few months to add structure and complexity. This dry white wine eyes bright yellow with light green hues. It is ideally enjoyed at 12°C and can be aged for 10 years or longer.
Nose: Its fine nose is expressive with aromas of apricot and honey on elegant layers of tropical fruit and citrus, all amplified by scents of nuts and vanilla.
Palate: Rich in texture, this stylish aromatic wine is delicately balanced by a refreshing palate that leads into a complex finish.
Pairings: Ovilos White matches well with firm fish on the grill, seafood risotto, sushi, turkey and other poultry, and cheese soufflé.

About Biblia Chora Winery
Ktima Biblia Chora is located in the village of Kokkinochori, Kavala, in Northern Greece. It was established by the oenologists Vassilis Tsaktsarlis and Vangelis Gerovassiliou who planted the first organic vineyard of the estate in the foothills of the Mt Pangeon, in 1998. Today, the 57-hectare privately owned vineyard surrounds the modern winery, where all the wines of the estate produced.
Their goal is to craft wines of exceptional varietal expression and quality that showcase the best that the Pangeon ecosystem has to offer. Thus, the vineyard is cultivated with great care, and state-of-the-art technology blends with the winemaking tradition of the region and the producers’ know-how and experience.
