Wine maker’s notes
Origin of grapes: a single vineyard of very old rootstocks (over 150 years old) located on the village of Megalochori producing a rare and special fruit.
Vinification: Classic white vinification under controlled temperature is followed after a short pre-fermentation cold soak. Terroir driven approach in order to express its unique character. Maturation with the gross lees for 22 months in stainless steel tank and 2 months in large oak before bottling. A year of cellaring adds more complexity and layers to this one-of-a-kind wine.
Description: Austere and chalky mineral nose full of iodine. Ripe stone fruit and herbal notes in a salty background. Generously structured mouthfeel, complex, and multi-layered. Reminiscent of thyme and tea in a sea driven phenolic palate. Great balance with a long savory and mineral aftertaste.
Serving and food pairing: Best served at 11-13°C, decanted for correct “breathing” to point out its complex character. Due to its umami character combines nicely with shellfish, smoked eel, herbal-crusted lamb and soy-based dishes.
