Wine Maker’s Notes
Koutsoygiannopoulos is the name of the family that produces the wine. The winery was founded in 1870 by the brothers Grigoris and Dimitris Koutsoyannopoulos and is located in Vothonas. The vineyards are located in the Exo Gialos area of Fira (Aspra Homata).
It is called Ambelones (vineyards) because the grapes come from the winery’s private vineyard. The harvest takes place between 25-30 August, a little later than the white. The juice is transferred to oak barrels for the fermentation process. There it is enriched with the aroma and taste of the oak. The wine reacts with the wood of the barrel to soften the tannins and give a more velvety finish. It matures in the barrels for 18 months.
Perfectly matches with meat, red sauces, and spicy food. Best served at 17-18oC.
