We are happy to share with you the authentic recipe (400gr of fava give us 4 main portions or more as a side dish): Rinse the fava and put it in a saucepan with water (3:1), skimming as it starts boiling. Add salt, pepper, and one chopped dry onion. Let it simmer on low heat for 35-45 minutes stirring rigorously while mashing until it becomes creamy. Serve sprinkled with extra olive oil, chopped dry onion, caper, and sundried tomato. Enjoy it as a delicious appetizer or a dip. Bon Appetit!

The fava bean is one of the most identifying products of Santorini island and grows in a dry rich in mineral soil. “Santorini Fava” is a “Protected Designation of Origin” that comes from the plant “Lathyrus Clymenum L.” that grows exclusively in Santorini for more than 3500 years.
Santorini Fava has very high nutritional value as it is rich in proteins and carbohydrates. The traditional method of production which includes drying under the sun and aging results its velvety texture and slightly sweet taste.
